Salted Caramel Pretzel Ice Cream

Today (and pretty much every day of my life lately) I settled into a booth at a coffee shop to feel increasingly bad about my intelligence study. (Like, I get that the Sample Answers to these practice questions are written by professionals with unlimited time and also access to law books. But also, it feels super terrible to miss half of what the Sample Answer brings up. So THANKS.)

Over the next few hours, I couldn’t believe people around me. They had the audacity to live and breathe and interact in my presence. What’s that even about?! I’M STUDYING OVER HERE.

So I went to make cookies tonight. And I only had one cup of flour.

I also only had 3 oz of semisweet chocolate.

Luckily, I had pretzels and plenty of oats. And a mishmash of other chocolate stuff.

Sometimes, I’m too lazy to go to the store. This was one of those times.

Strawberry-Orange Cheesecake Pretzel Bars

I received a large box in the mail today.  Large and heavy.  I’ve been waiting for this box to arrive for a week now.  It should have been here last week, but you know, snow and such.  As UPS put it, “adverse weather conditions” caused my box to sit, lonely and unloved, in a warehouse in Mesquite (ick) for days.

I’d been checking the tracking info for this box pretty much 4 times a day, every day.  So today, when it said “Delivered!” in bright green friendly letters, I said, “We need to go to the apartment office like NOW.”  So we went.  And as I carried this large, heavy box back to the car, I could feel myself smiling like a total goof.  Ben said it was the biggest smile he’d seen on my face in at least 2 days.  Hmmm.

When life gives you a snow day, bake!

Well…you have to start somewhere, right?  Might as well be here, with a killer recipe for Compost Cookies.  Sounds kind of icky, doesn’t it?  That’s where you’re wrong.  But more on that later.

First, why today is the perfect day to write my first post:

1. Today, February 1st, was a snow day in Wichita Falls, TX.

My first snow day as a working adult!  I’ve been lazing around the apartment all day, since the roads are covered in 1/2″ of ice and about 6″ of snow.  Here in Texas, we don’t really believe in having enough trucks to treat the roads during bitter winter storms.  Even though the same thing (though worse) happened last year.  Here.  Anyway, I didn’t have to go to job #1 today because the restaurant where I work as a hostess couldn’t open.  And is there anything better to do on a snow day than bake?!?!!?  I thought not.
