Peanut Butter Cupcakes

There are a LOT of things on my to-do list and practically none of them involve studying.  (By practically none I mean…one of them is studying.)

I need to paint my nails in the spirit of Valentine’s Day.  I spent >30 minutes at CVS tonight choosing the PERFECT sparkly pink nail polish.  Also buying new mascara (other tube only has 75% left, clearly need more) and trying not to buy candy because obvi it will be on sale in 2 days.

Real talk: I, Kate, am an obsessive person.

When I find something I like, I let it consume me. Until I find the next thing I can’t live without. I know that moderation is supposed to be the key to happiness or something like that. But I just don’t work that way. At all.

Today is a very special day!

Not only is it St. Patrick’s Day, but also (and more importantly) it is my nephew Casper’s birthday! He is three!

So cupcakes are for birthdays. But these cupcakes are not for three-year-old birthdays. They are more for St. Patrick’s Day.

Whew. What a title, right?

So I was too busy (read: lazy) to bake a King Cake this year. But baked goods were needed for Mardi Gras celebration. Therefore, I tried to think of the most decadent thing I could. The Roommate nixed my Bananas Foster Cupcake idea because she’s not all about banana baked goods. That’s fine. I’ll make them some other time. (Spoiler alert: Rum-Caramel Sauce WILL be involved!) This is what I came up with instead. I think they were a good substitute. Though I forgot to hide plastic babies in them. Next year…
